So you can have a BPEL process that assigns partner links dynamically. You
send your process a message giving it the address of a service and it can
then use this address as a process partner with a simple assignment.

For your variables are you saying you don't know the values or even the
structure of the variable. If the former, that's exactly what BPEL variables
are for, you assign messages to variables and are free to manipulate them.
If the latter, you can still have variables typed as xsd:any but you'll have
to know at least a bit about them if you want to manipulate them
