With XPath, you use the "and" and "or" keywords... such as

<bpel:if>
   <bpel:condition>$employee/experience &gt 5 and $employee/skills =
"Java"</bpel:condition>
   <bpel:then>
      <!-- match -->
   </bpel:then>
</bpel:if>
