Having said that, I discovered that I could just check whether the 
BuildListener was an instance of DefaultLogger, which is all I needed

    ant.project.buildListebers.each {
         if(it instance of DefaultLogger) {
           it.messageOutputLevel = ant.project.MSG_DEBUG
         }
    }
