As a stop gap measure until this new task is available.....
I've done this by getting the command line add on for winzip and use the 
<exec> task to zip it up. This uses up to AES256 encryption.

You can use input task to gather the password or pass it in from the command 
line. I wrote a swing ant task that prompts for the password and confirm 
password. Then sets this into a property that can be a parameter into the 
WZZIP.EXE execution.

Just an idea.....
